When I was young, my family and I used to go to a steakhouse that had this amazing brownie sundae that the servers brought out hot with a Hershey’s chocolate bar melting over it. I found myself craving this brownie all the time (don’t judge). So I decided to eventually try it on my own. Over the years I’ve tested a few different recipes and in the end, scratch-made is the best, lol. Can you say lol on a blog?…Anyways, a close second and the method I go to consistently just because it’s a rare occasion that I have time to make brownies from scratch, all starts with a box.
The Duncan Hines Chewy Brownie Recipe is by far my favorite. I don’t buy anything else. However, I jack up the recipe and instructions a bit so read carefully:
On the back of the box there will be a recipe for fudgy brownies and one for cake-like brownies. I always use the fudgy brownies recipe which calls for
¼ cup of water
½ cup of oil….(I go a little bit over a half though for moisture’s-sake
In addition to what the box calls for above, I also add:
- Mix the ingredients and bake immediately for approximately 5 minutes less than the suggested time. I explain why next.
- Now this is where it can get a little confusing. I mentioned before that I like my brownies moist. There’s nothing worse than someone offering you a brownie and it’s really dry so you’re about to choke but you can’t be rude and tell them that their baking is not great. To ensure that they don’t overcook and dry out, I take them out approximately 5 minutes before the recommended baking time. My favorite size pan to use for these is the 8 x 8 size. I used 9 x 9 this time because I wanted to have a little extra to share. And I never use the 9 x 12 (or 13) size pan…if you do I would recommend taking them out even earlier than the 5 minutes based on your preference for moisture. So for instance, for the 9 x 9 inch pan that I used, I took them out around 24 minutes. They were perfect.
- Let the brownies cool almost completely.
